Stewed Chicken and Pine Apple

This is again one of the most delicious Chinese dishes. The yummy gingery flavored sauce is delightful to get every last droplet, serve stewed chicken, pepper, and pineapple over hot boiled rice. I really loved the flavor of this stew.

 

Makes:2 -3 serving

Ingredients:

•           2 chicken Breast, cubes

•           1 oz. soya sauce

•           ½ oz. corn flour

•           1 onion, slices

•           ½ oz. ginger, chopped

• 5 rings of pineapple, sliced

•           1 oz. water

•           ¼ oz. Sesame oil

Ingredients for sauce:

 

·         1/3 oz. corn flour

·         1 cup chicken stock

·         1 oz. soya sauce

·         ½ oz. salt

·         ½ oz. oil

 

Preparation:

 

1. In a large bowl, add chicken, soya sauce, corn flour, and water. Mix it nicely and leave it for 15 minutes to marinate.

 

2. In another bowl pour chicken stock, soya sauce, corn flour, salt, and oil. Now the sauce is ready.

 

3. Heat the oil in saucepan, add onions fry it for 2 minutes, then add ginger and the marinated chicken in it and cook it for 2 minutes and add sauce mixture to it.

 

4. When the mixture became thick, add pineapple slices to it.

 

5. Stewed chicken and pineapple are ready. Serve with egg fried rice.

 

Chicken Shashlik

•          15 oz. boneless chicken

•          1 large onion, cut in cubes

• 1 large capsicum, cut in cubes

•          1 large tomato, cut in cubes

• ½ oz. garlic, finely chopped

• ½ oz. garlic, finely chopped

•          1 spring onion, chopped

•          2 oz. ketchup

•          ¾ oz. soya sauce

•          ½ oz. sugar

•          1 cup chicken stock

•          1 oz. chili sauce

•          1 oz. corn flour

•          ½ oz. vinegar

•          ½ oz. black paper

•          Salt to taste

•          1 oz. Oil

 

Preparation for chicken:

 

1. Cut all the vegetables and chicken into cubes than skew chicken and vegetables on a skewer.Skew one chicken cube first, followed by vegetables, then another chicken cubes and so on.

 

2. Prepare all skewers in the same way.

 

3. Heat a saucepan and fry all the chickenshashlik sticks thoroughly.

 

4. Heat oil in a saucepan and add ginger garlic in it. Fry it for 1 minute.

 

5. Add spring onion, sugar, ketchup, soya sauce, chili sauce, chicken stock and cook it for 1 minute.

 

6. Dissolve corn flour in the water and put it in the sauce. When sauce becomes thick, add all the skewers in the sauce add vinegar and black paper and pour all the sauce over the sticks with the help of spoon.

 

7. Juicy Chicken shashlik is ready. Serve it with boil rice.

Preparation:

 

1. Add chicken, egg white, corn flour and salt in a bowl and stir with a fork until cornflour is dissolved and no lumps remain. Set aside.

2. Heat the oil in a saucepan, fry the chicken strips for 2 minutes.

3. Add soya sauce, chili sauce, salt, sugar, and spring onions in it then cook the sauce at a lower temperature lets their flavors develop.

4. Mouth-watering Chinese chicken is ready. Serve it with rice.

 

Chicken Penne Pasta

This is a pasta recipe I have been cooking forever. I have made since I was a teenager. This creamy chicken pasta is perfect especially when you really want some classic flavor combinations must try it.

Ingredients:

• 11 oz. penne pasta

•           7 oz. boneless chicken, sliced

•           9 oz. Mushrooms

•           1 onion, paste

•           4 cloves of garlic, Chopped

•           2 spoons parsley, chopped

•           ½ cup cream

•           ½ oz. Black paper

•           ¼ oz. oregano leaves

•           ½ oz. salt

•           3 oz. olive oil

Preparation:

1.   Put the penne pasta in boiling salted water.Drop it into cold water to stop the cooking process and drain thoroughly and add 2 spoons of oil.

 

2. Heat oil in a wok, add onion and garlic in it and stir it for 1 minute

3. Add mushrooms to the wok, fry it till it becomes golden.Now add chicken and cook it for 1 minute.

4. Addparsley, oregano leaves, cream, salt, and pepper. Stir all ingredients for 1 minute.

5. Add boiled pasta and mix it all thoroughly.

6. Mouth-watering penny pasta is ready. Serve it hot with dinner rolls.

Lemon Chicken

Ingredients:

•           53 oz. chicken

•           2 lemon juice

•           2 cloves garlic, paste

•           2 ½ oz. butter

•           1 oz. parsley, crushed

•           1 oz. black paper powder

•           2 oz. oil

Preparation:

1. Take a large mixing bowl and put the chicken in it.

2. Add garlic, salt, paper, lemon juice or you can crush the whole lemon. Now mix all the ingredients nicely and marinate it for 2 hours.

3. Preheat the oven to 350 F. Grease the baking tray with butter, then arrange the chicken pieces and pour all the mixture and butter.

4. Bake the chicken for 30 minutes or till it becomes tender. You can pour the lemon mixture to chicken in between the baking.

Preparation:

1. Heat the oil in a pan, add ginger garlic paste sauté it for 1 minute.

2. Add chicken and fry it for 5 minutes. Add salt, cumin seeds, coriander and paste of green chilies and mix all ingredients gently.

3. Addwhite pepper, black pepper and whisked yogurt.

4. Stir all the mixture thoroughly for 5 minutes over the medium heat.

5. Add chopped green chilies and cream. Cover the pan for 2 minutes over low heat.

6. At the end, add butter and allspice powder.

7. Chicken white handi is ready, serve it with hot naans.

Ingredients:

•           35 oz. rice

•           35 oz. beef

•           3 onions, sliced

•           17 oz. yogurt

•           1 cup milk

•           ½ oz. garlic paste

•           ½ oz. ginger paste

•           ½ bunch mint leaves

•           1 bunch coriander leaves

•           6 green chilies

•           4 oz.  almonds, cut in half

•           2 lemons, cut in slices

•           6 cloves

•           2 cinnamon sticks

•           ½ oz. black cumin seeds

•           5 green cardamoms

•           ½ oz. white cumin seeds

•           2 bay leaves

•           ¼ oz. orange food color

•           ½ oz. Salt

•           1 cup oil

Preparation:

1.Wash and soak the rice for 20 minutes then boil the salted water in a pot having ½ oz. cumin seeds and bay leaves init. Add all the rice in that boiled water and cook it for about 5 minutes or to 90%,then drain the water and keep the rice aside

2. Heat the oil in the large saucepan.Add onions in it and fry it till it becomes brown. Now rinse all onions from the oil and spread it on a pepper towel.

3. In the food processor, grind ginger,garlic, mint, coriander, green chilies, cloves, cardamoms and cinnamon sticks altogether.

4. Heat the oil again in the pan and pour all the mixture along with almondsin and stir it nicely for 3 to 4 minutes.

5. Add meat, salt and yogurt, mix it well then add 8 cups of water and cook the meat over low flame.

6.When the meat became tender, and half cup water is left,then layerhalfrice.

7. Add food color and lemon slices, then layer remaining rice.Add brown onions and milkon the top of the layered rice.

8. Now cover the pan tightly and cook the rice for 8 to 10 minutes on a very low heat.

9. Spicy Hyderabadi biryani is ready. Serve it with vegetable salad and mint raita.

•        34 oz. shrimps

•        3 eggs

•        1 oz. corn flour

•        1 onion, paste

•        1 oz. soya sauce

•        ½ oz. ginger paste

Preparation:

1. Put the shrimps in boiling water for 5 minutes and allow it to cool.

2. In a mixing bowl, add onion paste, ginger paste, soya sauce, salt, eggs, and corn flour and mix it well, take this mixture aside.

3. Heat the oil in a saucepan then add shrimps and fry it for 1 minute then add the mixture of sauce. Fry the mixture with shrimps for 5 minutes.

4. Tasty Dragon shrimps are ready. Serve it over rice noodles with fresh sautéed veggies.

 

Stir Fry Chinese Shrimps with Tomatoes

Stir fry Chinese shrimps with tomatoes is a classic home-style Chinese dish that requires little efforts to bring the freshest taste. It’s a made on a regular base in the Chines families because of its taste and loads of nutrients. I am sure you will love it too.

•           18 oz. shrimps, remove shells and clean

•           4 medium tomatoes

•           1 cup chicken stock

•           2 oz. soya sauce

•           2 oz. sugar

•           4 cloves garlic, crushed

•           1 spring onion, Chopped

•           3 oz. oil

Preparation:

1. Heat the oil in the wok and cook the shrimps until it becomes bright pink.

2. Add garlic, spring onions and sugar in it, stir it for 1 minute.

3. Boil 4 cups of water in another pan then add the tomatoes and boil them for 2 minutes.

4. Remove the skin of tomatoes and blend it in a blender. Tomato paste is ready.

5. Now add tomato paste in the shrimps and stir it well

6. Add chicken stock and soya sauce in it and cook it for 5 minutes.

7. Delicious Stir fry shrimps with tomatoes are ready. Serve with fried rice.

•           35 oz. fish, Cut into 5-6 large pieces

•           3 onions, sliced

•           8 Green chilies, chopped

•           4 tomatoes, chopped

•           ¼ oz. red chili powder

•           ¼ oz. turmeric powder

•           ½ oz. lemon juice

•           ½ oz. vinegar

• ½ oz. allspice powder

•           1 oz. chili sauce

•           ½ bunch Coriander leaves

•           ½ oz. salt

•           1 cup oil

Preparation:

1. Marinate the fish with hot sauce, vinegar, and salt for half an hour.

2. Heat the oil in the skillet, place the pieces of fish in the oil and fry until it becomesgolden then transfer the fish into platter.

3. Now add onions,sauté it for 2 minutes then add tomatoes, green chilies, red chilies, turmeric, all spice powder, and salt. Cook it till all tomatoes become soft and whole mixture is mushy.

4. Add the fish fillet carefully, try not to overlap them and cover the pan. You can add ¼ cup of water if required then shake the pan carefully. Don’t use the spoon.

5. Cook for about 10 minutes maximum till you see the fish has been cooked.

6. Add lemon juice and coriander at the end, then dish out.

7. Light and delicious Sindhi fish is ready. Serve it hot with plain rice.

•           1 egg

•           1 oz. corn flour

•           1 oz. all-purpose flour

•           ¼ oz. ginger paste

•           ¼ oz. white pepper powder

•           ¼ oz. black paper powder

•           ½ oz. salt

• 1 cup Breadcrumbs

•           Oil for frying

•           ¼ oz. white pepper powder

Ingredients for Thai dipping sauce:

•           4 garlic, crushed

•           1 oz. Thai fish sauce

• 4 green chilies finely chopped

•           2 oz. lemon juice

•           1½ oz. water

Preparation of Thai Dip:

1. Add garlic, fish sauce, green chilies, lemon juice and some water in a mixing bowl.

2. Stir all the Ingredients well. Thai dipping sauce is ready, keep it aside.

Preparation of Finger Fish:

1. Cut fish into long, thin strips.

2. Place the fish in a bowl and add beaten egg, ginger, garlic, corn flour, all-purpose flour, salt, and pepper.

3. If you want spicy flavor, you can add ¼ oz. of red chili flakes (it's optional).

4. Mix all the ingredients thoroughly and marinate the fish for at least 1 hour.

5. Roll each finger fish in the bread crumbs and place them in a single layer of flat dish.

6. Heat the oil in a frying pan or skillet over a medium heat, deep fry all the pieces for 8 to 10 minutes until the crumbs are golden and fish is cooked.

7. Drain it on paper towel.

8. Finger fish is ready, serve immediately with the Thai dipping sauce

 

Green Masala Fish

Cooking a whole fish gives you unbelievable flavors, and it is surprisingly simple to do. It's very quick and tasty Green masala fish recipe. Green masala is a fresh and savory paste made with mint, coriander, chilies, and garlic. Fish has lots of proteins which is very good for your health. I include fish in my daily diet.

Ingredients:

  • 35 oz. whole snapper or any other fish, cleaned
  • ½ bunch coriander leaves, paste
  • 4-5 green chilies, paste
  • ¼ bunch mint leaves, paste
  • ½ oz. garlic paste
  • 1 oz. lemon juice
  • ½ oz. salt
  • Oil for frying

Preparation:

1. Make the cuts with the knife blade placed at 45degree angle to the surface of the fish; the flash overlaps the cut so that when it shrinks with frying the bones are not exposed apply the cuts on both sides of the fish.

2. In a food processor, grind mint leaves, coriander, green chilies, and garlic all together.

3. Apply all the above mention ingredients on fish and put it aside for 2 hours.

4. Deep fry the fish on a medium heat. Give 5 minutes for one side then 5 minutes for other side. And transfer it to a tray.

5. Juicy and tender Green masala fish is ready. Serve it hot with sprinkling lemon juice on it.

 

Crispy Fish

Fish is generally steamed in Bangladesh, and it can also be red cooked. It is very delicious and has a unique taste to resist. Although it takes 2 hours to marinate, the cooking time is not more than 15 minutes. The dish is full of flavor loaded with taste and very healthy in protein.

Ingredients:

•           16 oz. fish, cleaned

•           ½ oz. chopped ginger

•           1 oz. salt

•           ½ oz. flour

•           Oil for deep fry

 

Ingredients for batter

•           1 egg white

•           3 oz. milk

•           Salt and paper to taste

•           ¼ cup all-purpose flour

•           ½ oz. double acting baking powder

•           ¾ oz. chopped spring onions

Preparation:

1. Cut the fish into 4cm cubes. Sprinkle and rub the fish with salt and ginger, working them in with the fingers.

2. Leave the season for two hours. Drain away any liquor and dust with flour.

3. Make the batter by beating together in a basin, egg white, milk, salt, pepper, and self-rising flour, using a rotary beater for 30 seconds.

4. Coat the pieces of fish with the butter mixture.

5. Heat the oil in the deep fryer. Deep fry the pieces of fish for three to four minutes. Drain on absorbent paper and keep hot in the oven and serve, sprinkled with chopped spring onions, on a well-heated serving dish.

•           2 Spring onions, cut into the pieces of half inch

•           1 onion, chopped

•           1 capsicum, roughly chopped

•           1 tomato without seeds, chopped

•           ¼ oz. black paper

•           ½ cup mayonnaise

•           ½ oz. tomato ketchup

1. Take a large Mixing bowl then add macaroni’s, noodles, onions, capsicum, tomato, pineapple in it.

2. Further add black paper, tomato ketchup, mayonnaise, sugar and salt in it and mix all the ingredients nicely.

Preparation:

1. In a large bowl, combine mango, bananas, peaches, pineapples, strawberries, and walnuts.

•           8 oz. cucumber, slices

•           8 oz. young carrot, slices

• 8 oz. sweet green pepper

•           8 oz. red sweet pepper

•           3 sticks spring onions

•           1 oz. vinegar

•           2 oz. olive oil

•           2 cloves garlic, chopped

•           ¼ oz. ginger crushed

•           2 oz. soya sauce

•           1 oz. Tabasco

•           1 oz. dry sherry

•           ½ oz. sesame

•           1 oz. sugar

 

Preparation:

1. Cut all the vegetables 2 -3 inches.

2. Blend the soya sauce, Tabasco, sherry, sugar, vinegar into a smooth mixture.

 3. Heat the olive oil in a large frying pan. Add the ginger and garlic and stir-fry them over a medium heat for half minute.

4. Add all the vegetables and other prepared ingredients, and raise heat to the mixture.

5. Turn the vegetable in the hot oil and saute for 2 and half minutes.

6. Add the sesame oil, and turn the vegetable for another half minute, then serve.

 

DESSERTS

Carrot Halwa

It doesn't matter you like carrots or not this recipe will surely become one of your favorite desserts as it is unique, tasty and very light on the stomach.  You can cook the carrots in plain water and use khoya at the end, but I have used milk for cooking carrot as it generates a creamy taste and texture, try and enjoy this recipe.

  • 35 oz. carrots
  • 2 cups sugar
  • 4 cups milk
  • 1 cup oil
  • ½ cup almonds and cashews, crushed
  • ½ oz. green cardamom powder
  • 1 pinch saffron strands
  • ½ oz. golden raisins

 

Preparation:

1. First of all, take the fresh carrots. Peel and grate it.

2. Take a deep pan preferably with a heavy bottom and pour milk and carrots in it.  Cover the pan and put it on a low flame for 15 to 20 minutes.

3. When the milk is 75 % reduced, add oil, sugar, and cardamoms powder in the mixture.

4. Continue cooking over medium flame, until the halwa turns into deep radish color.

5. At the end, add cashew, almonds, raisins, and saffron. Simmer till all the milk evaporates then switch off the flame.

6. Carrot halwa is ready. Serve it hot, or you can also serve it cold.

 

Mango Caramel Pudding

Mango pudding is very popular and delicious fruity dessert in Asia. When mangoes are all around, they should be used widely as they are loved by all. This dessert is tasty as well as easy to make. Just try this recipe once and let yourself know what a real pudding is. Enjoy mango in the right season.

Makes:3 - 4 serving

Total Prep Time:45 minute

Ingredients:

  • 6 eggs
  • 1 cup sugar
  • 4 drops mango essence
  • 2 cup milk
  • 1 large mango, puree
  • 4 oz. sugar for caramel
  • Half cup water

Preparation

1. Use electric beater to beat eggs then add sugar and mango essence into it and beat till sugar dissolves and mixture becomes thick.

2. Add milk to the mixture and beat it again for 15 minutes.

3. Put caramel on a low flame in a pan and add 3 spoons of sugar, when it becamecaramelize then pour it into a pudding mould. Keep aside to cool.

4. When the caramel becomes hard, adds half mango chunks and pour all the egg mixture over it.

5. Preheat the oven to 250 degrees. Bake it for 20 to 25 minutes

6. When pudding is done then cools it to a room temperature and put it in a fridge.

7. Take it out from mould. You can apply the whipped cream on pudding; it's optional.

8.  Mouth-watering Mango pudding is ready to serve, garnish it with mango chunks.

 

Special Rasmalai

Rasmalai is another very popular sweet dish especially for those who love to eat dessert served cold.This dish initially appeared from Indian subcontinent but nowadays cooked globally because of its taste, texture and low-fat contents. It has always been one of my favorite desserts,must try it.

Makes:4 serving

Total Prep Time:25 minute

Ingredients:

•           2 cups milk powder

•           1 oz. oil

•           2 eggs

•           ½ oz. baking powder

•           1 oz. white flour

•           3 drops vanilla essence

For milk syrup

•           35 oz. fresh milk

•           1 cup sugar

•           ½ oz. cardamom powder

Preparation:

1. Take a pan and boil fresh milk with sugar and vanilla essence. Boil it ones then leave it on low flame for 15 minutes.

2.Take a large bowl, put dry milk, oil, flour and baking powder and mix it nicely.

3. Beat the eggs pour it gradually and mix all the ingredients with hands thoroughly.

4. Knead till everything getstogether and forms a ball shape.

5. If the dough is looking dry, you can add ½ oz. milk, don’t use water.

6. Now make small (walnut size) balls from the dough and put them into the milk syrup.

7. Set the stove on high flame once that milksyrup boils then keep the flame on low for 8 to 10 minutes and cover the pan.

8. When balls come on surface, turn off the flame.

9. Spongy rasmalai is ready. Serve cool and garnish it with pistachios and almonds.

Royal Vermicelli Desert

(Sheerkhurma)

The special thing about this dish is that it contains lots of dry fruits like dry dates, almonds, and pistachios which make each byte sweet and crunchy. Moreover, each byte is loaded with good amount of fiber, iron, potassium, and antioxidants. This dish is also called Sheer Khurma in Middle East countries meaning sweetened milk with dried dates.

Makes:8 serving

Total Prep Time:30 minute

Ingredients:

•           1 cup vermicelli

•           8 cups milk

•           1 oz. oil

•           1 cup sugar

•           4 cardamoms

•           6 dry dates, sliced

•           ¼ oz. saffron

•           6 almonds, sliced

•           10 pistachios, sliced

•           1 oz. raisins

•           2 oz. khoya

 

Preparation:

1. Take large pan pour milk in it and put it on a light flame.

2. Heat up the oil in the skillet then add cardamoms and vermicelli in it and cook it until it gets brown in color. (Don't overcook it; otherwise, you will lose the actual taste)

3. Add milk with dry dates into the vermicelli. Cook again for 10 minutes.

4. When dates become soft, add sugar, saffron, almonds, pistachios, raisins, and khoya.

5. Cook it for 5 minutes more and then dish out.

6. Royal vermicelli dessert is ready. You can serve hot or cold with garnishing nuts.

 

Fruit Custard

Fruit custard is a delicious and nutritive desert. It can be cooked on any special occasion or whenever you have fruits at home. Fruit custard is one of those desserts that people from all age groups love. A delightful mix of fresh chopped fruits dipped in rich and creamy custard. Experiment with different exotic fruits, as well as different combinations, to learn a perfect new process and start turning eyes.

Makes:5 - 6 serving

Total Prep Time:25 minute

Ingredients:

• 1-litre milk

•           ¼ cup banana custard (you can use any flavour)

•           ½ cup sugar

•           ¼ oz. green cardamom powder

•           1 cup cream

•           ½ cup grapes

•           1 apples, peeled, small cubes

•           1 mango, peeled, small cubes

• ½ cup pineapples, cubes

•           ½ cup red cherries for garnished, without seeds

Preparation:

1.  On a medium flame, boil the milk in vessel with cardamom powder.

2. Combinecustardpowderandhalf cup of water, mix well until all lumps dissolve.

3. Add custard batter to the boiled milk and stir nicely. Add sugar, stir the batter continuously over medium flame, when it starts to thicken, remove from flame and cool.

4. Whip the cream, cut the fruits into small pieces.

5. When custard gets cooled, add fruits and cream into it.

6. Mix all ingredients nicely, keep the custard in the refrigerator for 2-3 hours because it tastes more tempting once cool.

7. Fruity custard is ready. Garnished with cherries and Serve it chilled.

Note: You can use any other fruits like pomegranates, strawberries, banana or anyseasonal fruits as per your choice. You can skip the fruits which you don’t like. But don’t add juicy fruits like watermelon, orange because it can make fruit custard thin in consistency
